Summer Recipes


Think of ANDSTAR when you need to address some unwanted tree issues in your backyard prior to hosting this summer's backyard fun.   

STRAWBERRY (No Bake) CHEESECAKE IN A JAR

CRUST

1.5 cups graham cracker crumbs

1/2 cup butter, melted

1/4 cup white sugar

4 half pint canning jars with lids and rings

CHEESECAKE

8 oz. cream cheese, softened

8 oz. frozen whipped topping, thawed

2/3 cup white sugar

1 tsp. vanilla extract

4 fresh strawberries

Prepare crust: Mix graham cracker crumbs, melted butter, and 1/4 cup sugar together in a bowl. Press 1/4 of mixture into the bottom of each jar.

Prepare cheesecake: Beat cream cheese and whipped topping together with an electric mixer in a bowl until well blended. Beat 2/3 cup sugar and vanilla extract into cream cheese mixture until smooth and fluffy.

Spoon 1/4 of cream cheese mixture onto graham cracker crust in each jar. Top each cheesecake with sliced strawberries. Refrigerate cheesecakes until serving time.

SASSY SUMMER SANGRIA

INGREDIENTS

750 MIL bottle dry red wine

1/2 cup brandy

1/2 cup triple sec

1/3 cup frozen lemonade concentrate

1/3 cup orange juice

1/4 cup lemon juice

1/4 cup white sugar (opt)

1 medium orange

1 medium lemon

1 medium lime

8 maraschino cherries

2 cups carbonated water (opt)

Mix together red wine, brandy, triple sec, lemonade concentrate, orange juice, lemon juice, and sugar in a bowl.

Slice the orange, lemon, and lime into round slices and add to the bowl with the maraschino cherries.

Serve immediately over ice, or refrigerate 8 hours to overnight for best flavor. For a fizzy sangria, add club soda just before serving.

GRILLED SMOKEY VEGGIES WITH AVACADO AND GOAT CHEESE

INGREDIENTS

6 portobello mushroom caps

4 red bell peppers

1 red onion

1/2 cup olive oil

2 limes, juiced

2 Tbs grill seasoning

2 minced garlic cloves

1 pinch cayenne pepper

2 Tbs balsamic vinegar

1 avocado - cubed

1/2 cup crumbled goat cheese

salt - to taste

freshly ground black pepper - to taste

2 Tbs finely chopped basil

Place mushrooms, peppers, and onion in a 9x13-inch baking dish. Whisk olive oil, lime juice, grill seasoning, garlic, and cayenne pepper in a small bowl; pour over vegetables. Toss to coat and allow vegetables to marinate for at least 30 minutes.

Preheat grill to med heat and lightly oil the grate.

Remove vegetables from the marinade and shake off excess. Reserve remaining marinade.

Grill vegetables until tender, about 5 minutes. Transfer grilled vegetables to a large platter. Whisk remaining marinade with balsamic vinegar; pour over vegetables. Top with avocado and goat cheese, then season with salt and pepper. Sprinkle with basil

GRILLED TEQUILA LIME SHRIMP

INGREDIENTS

8 Tbs Lime juice

8 Tbs Tequila

1/4 cup Olive oil

 Six 10 inch skewers

3 cloves Garlic

Sea Salt to taste

1/4 Tsp Cayene pepper

3 pinches Ground black pepper

3 pinches Ground cumin

1 pound Lg shrimp, peeled & deveined

Whisk together lime juice, tequila, olive oil, and spices until blended. Pour into a lg plastic bag; add the shrimp, seal bag and turn to coat evenly. Refrigerate 1 - 4 hours before grilling.

Preheat grill to medium-high. Lightly oil grill grate, and place about 4 inches from heat source.

Drain marinade from shrimp. Thread shrimp onto prepared skewers, 5 to 6 per skewer. Cook, uncovered, on preheated grill until shrimp turn pink, turning once, for 5 to 7 minutes. Serve with lime wedges for garnish.

ROMA SUMMER PASTA

One 16 oz pkg linguini pasta

6 roma tomatoes

1 lb. shredded mozzarella cheese

1/3 cup chopped fresh basil

6 minced garlic cloves

1/2 cup olive oil

1/2 Tsp. garlic salt

ground black pepper to taste

fresh shredded parm to taste

Combine tomatoes, cheese, basil, garlic, olive oil, garlic salt, and black pepper in medium bowl. Set aside.

Meanwhile, cook pasta according to package directions.

Drain pasta, and transfer to a serving bowl. Toss with tomato mixture. Top with fresh shredded parmesan.

SUMMER FRUIT DIP

One 18 oz pkg strawberry cream cheese, softened

One 17 oz jar marshmallow creme

1 cup Cool whip

2 Tbs Orange juice

Blend with an electric mixer until smooth and well combined.  Serve with fruit and enjoy!
